they are called coxinha (Kosheenya) because they look like a boneless drumstick. they look beatiful. there is a new trend in Brazil of making coxinha with no dough. you basically bread the filling and deep fry it. I think if you tried making it, it'd look amazing
Just to mildly correct a minor issue so people do not get the wrong impression... Coxinhas are just NOT street food... it is a party food, a bar food, a fast food you walk into a café and can walk out eating it, but it is simply in no way something you would buy from a street car or a street vendor. It is close in spirit to Famichiki in Japan, you have to walk into a store to get it, it is just something you can find everywhere in a store in every corner of every major city, but not with a street vendor, lol. It is easier in Brazil to find Yakisoba in a street cart than Coxinha. It is a bit like saying NY Pizza is a street food... it is fast food, but unless you can get it on a street vendor, I don't think it is street food.
usually coxinha is made with shredded chicken, which is why its cooked the way it is. They boil the chicken until its ready to just be shredded. Which I've never been a huge fan of so I appreciate you going off that path.

If you're vegetarian OR vegan, you can swap butter for oil and you can make the filling "meat" with any substitute that's "shreddable".

You don't need to shred the chicken if you use a pressure cooker, and after the cooking time, you turn the heat off, wait for it to cool a little, and when it's warm, you SHAKE THE PRESSURE COOKER vigorously
